French Onion Soup Recipe. What a great time of year in Wisconsin to get onions from the farmers markets. I’m not sure if it is the freshness or what, but these onions brought me to a good amount of tears today! If you love onions as much as us I think you will like this soup. Hopefully I can share a great leek soup recipe with you in the future as well. Enjoy.
5-6 large onions peeled and thinly sliced, I prefer the yellow onions
3 Tbl. Olive Oil
3 Tbl. Arrowroot Powder
1/2 cup of dry white wine (optional)
6 cups of veggie stock
1 tsp. vegan Worcestershire sauce
3 springs of fresh thyme or 1 tsp. dried
salt and pepper to taste
In a large frying pan heat oil. Add onions and stir until well browned about 30 min. Add garlic and flour and cook for a few min. more. Stir in wine and deglaze the pan. Add the stock, Worcestershire, bay leaf and thyme. Simmer for about 15 min. Discard herbs before serving.
I prefer to serve with a side salad instead of the traditional bread and cheese.
